ROCK OYSTER FRITTERS

Fritter Batter

1 3/4 cups self raising flour

2 eggs

1 cup milk

1/2 tsp salt

1 dsp melted butter

Sift flour, combine eggs milk and melted butter, stir into dry ingredients and beat until smooth, stand for 1/2 hour

Add 1/2 a finely chopped onion, 1/2 finely chopped red capsicum, and a handful of chopped parsley and a cup of oyster meat.

Drop spoonfuls into hot oil and cook until brown all over.  Drain well on absorbent paper.

Serve immediately with aoli, or sweet chili scauce.

This recipe makes quite a large quantity enough for a party.
