Singapore Oyster Omelet

8 Angasi oysters

2 Tbs corn flour

1Tbs rice flour

8 Tbs water

1 Tbs oil

1 clove garlic chopped

3 eggs beaten

1 Tbs soy sauce

1 Tbs sake

5 sprigs coriander

1 spring onion

Mix corn flour, rice flour and water together to make a thin batter.  Heat heavy fying pan, add oil, pour in batter and cook for about 15 seconds, until half set, then add eggs.

When eggs are almost set make a hole in the middle by pushing egg and batter to sides, add garlic, oysters, then soy, and sake, cook until oysters are heated, gently turn mixture over until lightly combined.

Garnish with spring onions and coriander.

(this recipe would have originally used pacific oysters but angasis are tastier)
